  • 2 cups chopped kimchi
  • 1 tablespoon avocado oil
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1/2 tablespoon ginger paste or 1-inch fresh ginger, grated
  • 1 tablespoon peanut butter
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha (optional)
  • 3 tablespoons warm water
  • 2 teaspoons toasted avocado oil
  • 8 fajita-size (6-inch) flour tortillas
  • Fresh veggies: cucumbers, carrots, avocado
  • Fresh herbs: cilantro, mint, green onions
  • Crushed peanuts
  • Sriracha mayo
  • Lime wedges

Instructions

  1. Heat 1 tablespoon of avocado oil in a skillet over medium-high heat. Cook the ground chicken until fully cooked (about 5-6 minutes).
  2. In a bowl, whisk together soy sauce, brown sugar, minced garlic, ginger paste, peanut butter, sesame oil, sriracha (if using), and warm water until smooth. Pour over the cooked chicken and stir to combine.
  3. In another skillet with 2 teaspoons of avocado oil, sauté chopped kimchi over medium heat for about 10 minutes until caramelized. Add brown sugar during the last few minutes.
  4. Prepare toppings: Slice cucumbers and carrots; chop herbs; crush peanuts.
  5. Warm tortillas briefly and assemble tacos by adding chicken and kimchi first followed by fresh toppings.
