  • 1 pound Brussels sprouts (trimmed and halved)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 35 dried red chili peppers
  • 2 green onions (sliced; separate the green tops from the white bottoms)
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (freshly minced)
  • ¼ cup tamari sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon keto brown sugar substitute
  • 1 teaspoon sesame oil
  • ½ teaspoon xanthan gum (optional)
  • 2 tablespoons roasted peanuts (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss Brussels sprouts with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet cut side down and roast for 20-25 minutes until golden brown.
  2. In a skillet over medium heat, heat remaining olive oil. Add dried chili peppers, minced garlic, ginger, and white parts of green onions; sauté for 1-2 minutes until fragrant.
  3. Stir in tamari sauce, rice vinegar, keto brown sugar substitute, and sesame oil; simmer for 2-3 minutes. If using xanthan gum, whisk it in now.
  4. Add roasted Brussels sprouts to the skillet and toss to coat evenly. Cook for an additional minute until glazed.
  5. Serve hot garnished with green onion tops and peanuts if desired.
