  • ⅔ cup melted butter
  • 24 ounces cream cheese (room temperature)
  • 1 ¼ cups sugar
  • 3 large eggs (room temperature)
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 ¼ cups fresh blueberries (divided)
  • ⅛ cup sugar (for blueberry swirl)
  • 2 tablespoons water
  • 1 tablespoon lemon juice (for blueberry swirl)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F. Prepare a 9-inch springform pan with non-stick spray and parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until it resembles wet sand. Press into the bottom of the pan.
  3. Beat cream cheese and sugar in another bowl until smooth. Gradually add whisked eggs, mixing well after each addition.
  4. Stir in lemon zest, lemon juice, and vanilla until combined.
  5. For the blueberry swirl, heat half the blueberries with sugar, water, lemon juice, and cornstarch until thickened. Let cool slightly.
  6. Layer cheesecake filling and blueberry mixture in the crust, swirling gently with a knife to create patterns.
  7. Bake for about an hour until set but slightly wobbly in the center. Cool at room temperature before chilling in the refrigerator for at least four hours or overnight.
