  • 16 ounces cream cheese (at room temperature)
  • 2 large eggs (at room temperature)
  • 1/2 cup granulated sugar
  • 2 teaspoons finely grated lemon zest (from 1 medium lemon)
  • 3 tablespoons freshly squeezed lemon juice (from 1 medium lemon)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 2 cups fresh blueberries (divided)
  • Powdered sugar (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix melted butter, crushed graham crackers, sugar, and salt until combined. Press into a greased baking pan.
  2. In another bowl, beat cream cheese until smooth. Add eggs one at a time, then sugar, lemon zest, lemon juice, vanilla extract, and salt until fully mixed.
  3. Gently fold in one cup of blueberries. Pour filling over crust and sprinkle remaining blueberries on top.
  4. Bake for 35 minutes until set but slightly jiggly in the center. Cool before chilling in the refrigerator for at least two hours.
  5. Slice into bars and serve chilled.
