  • Juice and zest of 2 lemons (about 1/4 cup lemon juice)
  • 4 large eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups fresh blueberries (tossed with 1 tablespoon flour)
  • 2 1/2 cups powdered sugar for the glaze
  • 1/3 cup lemon juice for the glaze

Instructions

  1. Preheat oven to 350°F and grease a baking dish.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in buttermilk, vanilla, lemon juice, and zest.
  5. Fold in dry ingredients gently; then add floured blueberries.
  6. Pour batter into prepared pan and bake for 40-45 minutes or until a toothpick comes out with moist crumbs.
  7. Allow to cool completely before glazing with powdered sugar mixed with lemon juice.
