  • 4 pounds russet potatoes
  • 12 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 1 cup mayonnaise
  • 3/4 cup sour cream (or Greek yogurt)
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 12 ounces cooked turkey bacon (chopped)
  • 6 green onions (chopped)
  • 1 1/2 cups shredded medium cheddar cheese

Instructions

  1. Preheat the oven to 400°F. Pierce cleaned russet potatoes with a fork, coat with olive oil and kosher salt. Bake for 50-60 minutes until tender.
  2. Let the baked potatoes cool slightly, then peel and chop them into chunky pieces. Transfer to a large bowl and sprinkle with apple cider vinegar.
  3. Cook turkey bacon until crispy, then chop into bite-sized pieces.
  4. In a separate bowl, mix mayonnaise and sour cream; season with salt and pepper.
  5. Combine the warm potatoes with the dressing, chopped bacon, green onions, and cheese. Fold gently until mixed.
  6. Refrigerate for at least three hours before serving.
