  • 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • 2 tbsp mango purée
  • 2 tbsp strawberry purée

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time along with vanilla extract; mix in milk and mango purée.
  5. Gradually add dry ingredients until just combined.
  6. Fill cupcake liners about three-quarters full with batter.
  7. Bake for 18–20 minutes until golden brown; cool on wire rack.
  8. Fill each cooled cupcake with strawberry jam.
  9. For the frosting, beat softened butter until creamy; gradually add powdered sugar, mixing until smooth.
  10. Divide frosting into three bowls; mix in mango purée and strawberry purée for color.
