  • 1 lb flank steak (or NY strip/sirloin)
  • 1 pint grape or cherry tomatoes
  • ½ medium red onion
  • 1 head romaine lettuce
  • 1 large cucumber
  • ⅓ cup pitted kalamata olives
  • ½ cup crumbled feta cheese
  • 1 cup garlic hummus
  • 1 cup plain yogurt
  • Juice of ½ lemon
  • Fresh herbs (mint, oregano, dill)

Instructions

  1. Prepare the herbed yogurt dressing by whisking together yogurt, olive oil, lemon juice, minced garlic, dried oregano, dried dill, salt, and fresh mint until smooth. Chill if made in advance.
  2. Preheat the grill to high heat (about 450°F).
  3. Pat the flank steak dry and season generously with salt and pepper.
  4. Skewer cherry tomatoes and quartered onions; brush with oil and season with salt and pepper.
  5. Grill steak for about 4–5 minutes per side for medium-rare; grill skewered vegetables for about 5–8 minutes until softened.
  6. Let the steak rest for 10 minutes before slicing.
  7. Assemble bowls with chopped romaine, sliced steak, grilled veggies, hummus dollops, cucumbers, olives, and feta cheese.
  8. Drizzle with herbed yogurt dressing and garnish with lemon wedges or fresh mint if desired.
