  • 3 cloves garlic, minced
  • 2 cups frozen corn
  • 4 cups chicken broth (low-sodium)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Sauté diced onion and jalapeño in a large pot over medium heat until softened (about 3-4 minutes).
  2. Add minced garlic and cook for another minute before adding shredded chicken, broth, oregano, chili powder, salt, and pepper. Bring to a boil then simmer for 10-15 minutes.
  3. Whisk cornstarch with water until smooth and set aside.
  4. Remove chicken to shred; return to pot along with corn and lime juice.
  5. Stir in cornstarch mixture; simmer uncovered for another 10 minutes until thickened.
