  • 1 1/2 cups chocolate graham cracker crumbs
  • 4 tablespoons unsalted butter (melted)
  • 16 ounces cream cheese (room temperature)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 3 tablespoons peanut butter
  • 2 tablespoons coconut oil

Instructions

  1. Preheat your oven to 325°F (160°C). Mix the chocolate graham cracker crumbs, sugar, and melted butter until combined. Press into cupcake liners in a muffin tin.
  2. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in peanut butter and vanilla until mixed.
  3. Spoon the filling over the crusts, filling each liner three-quarters full. Bake for approximately 17 minutes or until slightly jiggly in the center.
  4. For topping, melt together chocolate chips, peanut butter, and coconut oil until smooth. Drizzle over cooled cheesecakes and chill in the fridge for at least an hour.
