  • 5 Tbsp melted salted butter
  • 8 oz cream cheese (room temperature)
  • ¾ cup plain 0% Greek yogurt (room temperature)
  • ⅓ cup granulated sugar
  • 1 egg + 1 yolk
  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • 1 Tbsp arrowroot starch or cornstarch

Instructions

  1. Preheat oven to 350°F.
  2. Prepare the crust by pulsing graham cracker crumbs with melted butter in a food processor until combined. Press into lined muffin tins.
  3. Bake the crust for about 5-6 minutes until set.
  4. For the filling, beat cream cheese until smooth, then add Greek yogurt, sugar, eggs, vanilla, lemon juice, and arrowroot; mix until well combined.
  5. Fill the baked crusts with the cheesecake mixture and bake for an additional 17-20 minutes until set.
  6. Cool at room temperature for about half an hour before refrigerating for at least three hours.
  7. Serve chilled topped with fresh berries and mint.
