  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter, room temperature (for the buttercream)
  • 34 cups powdered sugar, sifted (for the buttercream)
  • 34 tablespoons peach puree (for the buttercream)
  • 12 tablespoons sparkling grape juice or sparkling apple vinegar (for the buttercream)
  • Pinch of salt (for the buttercream)
  • Fresh peach slices (for garnish)
  • Candied peach or cherry (optional, for garnish)
  • Sparkling sugar or granulated sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time to the butter mixture, beating well after each addition.
  5. In a separate bowl, mix together the sparkling grape juice, milk, vanilla extract, and peach puree.
  6. Alternate adding the dry ingredients with the wet ingredients into the butter mixture, starting and ending with the dry ingredients.
  7. Fill cupcake liners about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow cupcakes to cool completely before frosting with peach buttercream.
  9. For the buttercream, beat room temperature butter until smooth, gradually adding powdered sugar, peach puree, and sparkling grape juice until fluffy.
  10. Frost each cooled cupcake generously with peach buttercream and garnish with fresh peach slices and sparkling sugar.
