  • 2 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream softened butter with granulated and brown sugars until fluffy. Beat in the egg and vanilla extract.
  4. Gradually mix in the dry ingredients until just combined, then fold in the diced peaches.
  5. For the streusel topping, mix oats, melted butter, flour, brown sugar, and cinnamon in a small bowl.
