  • 3 ripe peaches (peeled and sliced)
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 4 ounces cream cheese (softened)
  • 3/4 cup unsalted butter (melted)
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 1/3 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Prepare an 8×8-inch baking dish by greasing it lightly.
  2. In a bowl, mix sliced peaches with brown sugar, cornstarch, and cinnamon; set aside.
  3. In another bowl, combine flour, oats, baking soda, melted butter, and brown sugar until crumbly. Press half into the bottom of the prepared dish.
  4. For the cream layer, beat softened cream cheese with powdered sugar and a beaten egg until smooth. Spread over the crust.
  5. Layer the peach mixture on top of the cream layer, then sprinkle with remaining crumble topping.
  6. Bake for about 25 minutes or until golden brown. Allow cooling before slicing into squares.
