  • 1 medium onion, freshly grated
  • 4 medium potatoes, grated and drained well
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt, to taste
  • Freshly ground black pepper
  • 6 ripe tomatoes, diced (for topping)
  • 150g fresh mozzarella cheese, shredded (for topping)
  • Fresh dill, chopped (for garnish)
  • Olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine grated onion and potatoes. Mix in eggs, flour, salt, and pepper until well blended.
  2. Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of the batter into the pan and cook for about 2 minutes on each side until golden brown. Drain on paper towels.
  3. Preheat your oven to 200°C (400°F). In another bowl, mix diced tomatoes with half of the shredded mozzarella and fresh dill.
  4. Place cooked pancakes on an oven-safe tray. Top with tomato mixture and remaining mozzarella. Bake for about 15 minutes until cheese is melted.
  5. Serve warm with extra dill on top.
