  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tsp pumpkin spice
  • 225g dark brown sugar
  • 280g pumpkin purée
  • 75g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 200g butter
  • 15g dark brown sugar
  • 100g full-fat cream cheese
  • 345g powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, mix dark brown sugar and pumpkin purée until well combined. Add vegetable oil, eggs, and vanilla extract.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Pour the batter into lined cupcake tins (two-thirds full) and bake for about 23 minutes or until a toothpick comes out clean.
  6. Cool in tins for about 10 minutes before transferring to a wire rack and allowing them to cool completely.
  7. For frosting, beat together softened butter, dark brown sugar, cream cheese, powdered sugar, and vanilla extract until smooth.
  8. Frost cooled cupcakes generously with the frosting.
