Ingredients

  • 15 ounce can chickpeas (drained and rinsed)
  • 15 ounce can pumpkin puree
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 1 clove garlic
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cumin
  • Salt and black pepper to taste
  • 46 tablespoons ice cold water

Instructions

  1. Combine all ingredients in a food processor: chickpeas, pumpkin puree, tahini, lemon juice, garlic, maple syrup, cinnamon, cumin, salt, black pepper, and 4 tablespoons of ice-cold water.
  2. Blend until smooth for about 5 minutes. Scrape down the sides as needed. If too thick, add more ice-cold water gradually until desired consistency is reached.
  3. Transfer to a serving bowl and garnish with toppings like pumpkin seeds (pepitas), pomegranate arils, fresh herbs such as rosemary or thyme, and an extra sprinkle of cinnamon if desired. Serve with pita chips or sliced veggies.
