  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased baking dish to form the crust.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Mix in pumpkin puree, vanilla extract, and pumpkin pie spice.
  4. Pour cheesecake mixture over the crust and bake for about 40 minutes until set but slightly jiggles in the center.
  5. Allow cooling to room temperature before refrigerating for at least a few hours or overnight before serving.
