  • 1 teaspoon kosher salt (split)
  • 1/2 cup olive oil
  • 1/4 teaspoon black pepper

Instructions

  2. Blanch the Green Beans: Prepare an ice bath. After the potatoes are done, add green beans to the boiling water for 3-4 minutes until bright green and crisp. Move them to the ice bath immediately.
  3. Whisk Together the Dressing: In a bowl, mix balsamic vinegar, dijon mustard, minced garlic, half of the kosher salt, olive oil, and black pepper.
  4. Combine Everything: Drain potatoes and green beans. In a large bowl, combine them with dressing and remaining salt; toss gently.
