  • 6 oz white chocolate melting wafers (170 g)
  • 3 oz heavy cream (85 g)
  • 8 oz dark chocolate melting wafers (227 g)
  • Extra freeze-dried raspberry for decoration

Instructions

  1. Grind freeze-dried raspberries into a fine powder and mix with white chocolate melting wafers in a bowl.
  2. Gently heat heavy cream until simmering, then pour over the raspberry-chocolate mixture and let it sit before stirring.
  3. Refrigerate the mixture for 45 minutes to an hour until firm enough to scoop.
  4. Roll into small balls and chill on a parchment-lined baking sheet for another hour.
  5. Melt dark chocolate in a heat-proof bowl over simmering water until smooth.
  6. Dip each truffle in melted dark chocolate using a fork, allowing excess chocolate to drip off.
  7. Decorate with crushed freeze-dried raspberry before chilling again for 30 minutes.
