  • 2/3 cup white sugar
  • 1/2 cup unsalted butter
  • 1 cup white sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 can sweetened condensed milk

Instructions

  1. Prepare the raspberry coulis by cooking raspberries and sugar until thickened, blending smooth, and straining.
  2. Preheat oven to 350°F (180°C). Line a cupcake pan.
  3. Cream butter and sugar until fluffy; then add egg.
  4. Combine dry ingredients in a separate bowl; mix half into the butter mixture followed by milk, vanilla extract, and raspberry coulis. Add remaining dry ingredients.
  5. Divide batter among cupcake liners and bake for about 17 minutes.
  6. Once cooled, fill cupcakes with raspberry coulis.
  7. For frosting, whip room temperature butter until fluffy; gradually add sweetened condensed milk and raspberry coulis.
