  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • Zest of 1 lemon
  • ½ cup raspberry jam or preserves
  • ½ cup lemon curd
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • Fresh raspberries for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk flour, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, cream softened butter and sugar until fluffy; add eggs, vanilla extract, and lemon zest.
  4. Alternate adding dry ingredients and buttermilk to the butter mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool on wire racks.
  6. Once cooled, remove centers from cupcakes and fill each with half raspberry jam and half lemon curd before sealing back up.
  7. Prepare frosting by beating softened butter and gradually adding powdered sugar; mix in vanilla and enough cream for desired consistency.
  8. Frost each cupcake generously and garnish with fresh raspberries.
