  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 cup whole-milk ricotta cheese
  • 2 tablespoons heavy cream or milk
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • Salt and pepper to taste
  • ¼ cup honey
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon apple cider vinegar
  • Chopped fresh parsley or chives (optional)
  • Crushed pistachios or walnuts (optional)
  • Flaky sea salt (optional)
  • Lemon zest (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the carrots with olive oil, salt, pepper, and optional smoked paprika. Arrange them cut-side down on the baking sheet.
  3. Roast for 25-30 minutes until tender and caramelized, flipping halfway through.
  4. While the carrots roast, blend ricotta, cream (or milk), olive oil, lemon zest, salt, and pepper until smooth.
  5. In a small saucepan over low heat, warm honey and stir in red pepper flakes and apple cider vinegar for about 3-4 minutes.
  6. Serve the whipped ricotta topped with roasted carrots and drizzled hot honey.
