  • 4 medium sweet potatoes
  • 1 cup dried mixed lentils
  • 1/2 bulb garlic (68 cloves)
  • 1/4 cup tahini
  • Juice from 1 small lime
  • Olive oil
  • Sea salt and pepper
  • Fresh parsley
  • Chopped almonds (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash, dry, and cut sweet potatoes into wedges. Toss with olive oil, salt, and pepper on a lined baking sheet.
  3. Roast sweet potatoes for 45–55 minutes until tender.
  4. Cook lentils according to package instructions; drain any excess water.
  5. Slice the top off the garlic bulb, drizzle with olive oil, season with salt, wrap in parchment paper, and roast alongside sweet potatoes for about 30–40 minutes.
  6. Combine cooked lentils on the baking sheet with sweet potatoes during the last 20 minutes of roasting.
  7. For the dressing, blend tahini, parsley, lime juice, olive oil, cumin, salt, pepper, and roasted garlic until smooth.
  8. Mix roasted sweet potatoes and lentils in a bowl; drizzle generously with dressing and toss well.
  9. Serve warm or at room temperature topped with chopped almonds and extra parsley.
