  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 tbsp rosewater
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup finely chopped pistachios
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 12 tbsp rosewater (adjust to taste)
  • 12 drops pink food coloring (optional)
  • 1/2 tsp vanilla extract
  • A pinch of salt
  • Finely crushed pistachios for garnish
  • Edible rose petals for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add in your eggs one at a time and stir in vanilla extract and rosewater.
  5. Gradually add the dry ingredients into the butter mixture while alternating with whole milk.
  6. Fold in the finely chopped pistachios gently.
  7. Spoon the batter into lined cupcake tins, filling each about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the cupcakes cool in their tin for about five minutes before transferring them onto a wire rack.
  10. In a mixing bowl, beat softened butter until creamy, then gradually add powdered sugar.
  11. Mix in rosewater and vanilla extract and adjust sweetness as needed.
  12. Frost cooled cupcakes using either a piping bag or spatula.
  13. Sprinkle each frosted cupcake with crushed pistachios and top with an edible rose petal.
