  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Mix in the egg yolk (or flax egg), corn syrup (or honey), vanilla extract, and maple extract until well combined.
  4. In a separate bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
