  • 10 cups tomatoes (roughly chopped)
  • 2 tbsp fresh basil (or 2 tsp dried)
  • 1 tbsp fresh oregano (or 1 tsp dried)
  • 1 tbsp fresh parsley (or 1 tsp dried)
  • 6 cloves garlic (roughly chopped)
  • 1 cup onion (chopped)
  • 6 oz canned tomato paste (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse tomatoes and remove cores. Blanch in boiling water for one minute, then transfer to an ice bath.
  2. Peel off skins and remove seeds from cooled tomatoes.
  3. Combine prepared tomatoes with all other ingredients in the slow cooker, except baking soda and tomato paste.
  4. Cook on low for about 10 hours or high for 7 hours, stirring occasionally if possible.
  5. For a smoother sauce, blend briefly with an immersion blender or mash until desired consistency is reached.
  6. Stir in baking soda, adjust seasoning with salt, pepper, and any extra herbs before serving.
