  • 1 pound dried elbow pasta
  • 5 1/2 cups whole milk
  • 4 cups smoked Gouda cheese, shredded (divided)
  • 4 ounces cream cheese
  • 8 tablespoons unsalted butter (divided)
  • 2 cups Panko bread crumbs
  • 1/2 cup Parmesan cheese, shredded (divided)
  • 1/2 cup all-purpose flour
  • 1 tablespoon dijon mustard
  • 2 teaspoons salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon fresh thyme leaves

Instructions

  1. Preheat your oven to 375°F.
  2. In a bowl, mix Panko bread crumbs, 1/4 cup Parmesan cheese, and thyme leaves. Melt 2 tablespoons butter and combine with breadcrumb mixture.
  3. In a saucepan, warm milk. In another skillet, melt remaining butter and whisk in flour for about a minute. Gradually add hot milk while whisking until thickened.
  4. Stir in Dijon mustard, spices, cream cheese, and 3 cups of gouda; set aside.
  5. Cook pasta until just under al dente. Drain and return to pot; mix with cheese sauce until well coated.
  6. Pour into a baking dish and top with remaining gouda and breadcrumb mixture. Bake for about 30 minutes until bubbly and golden.
