  • 2 tablespoons date sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 pack instant yeast (2 teaspoons)
  • 1 cup water
  • 2 cups flax milk (or other plant milk)
  • 4 tablespoons coconut butter
  • 1 cup date sugar
  • 1 cup chocolate chips, melted with 1/4 cup coconut butter
  • 2 tablespoons coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cups peanuts, chopped
  • Pinch salt
  • 2.5 cups organic powdered sugar
  • 1 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast in warm water for about 10 minutes until foamy.
  2. In a bowl, whisk together dry ingredients: cassava flour, psyllium husk powder, date sugar, baking powder, baking soda, and salt. Add the wet ingredients and mix until a cohesive dough forms.
  3. Cover and let the dough rise for 45 minutes to an hour.
  4. Preheat oven to 350°F (175°C).
  5. Roll out the dough into a rectangle shape and prepare the filling by melting chocolate chips with coconut butter.
  6. Spread filling over dough, add chopped peanuts, roll up tightly, and slice into pieces.
  7. Place in a greased baking dish and bake for 20-25 minutes.
  8. While baking, prepare icing by mixing peanut butter with flax milk and powdered sugar until creamy.
  9. Ice cinnamon rolls once cooled slightly and serve warm.
