  • 3 TBSP salted butter
  • 3 TBSP all-purpose flour
  • 12 ounces evaporated milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp minced garlic
  • 2 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 8 ounces shredded mozzarella cheese
  • 4 ounces shredded Monterey Jack cheese
  • 2 ounces shredded Parmesan cheese
  • 10 ounces frozen chopped spinach (thawed and drained)
  • 12 ounces marinated artichoke hearts (quartered)
  • 16 ounces Casarecce pasta (or penne/rigatoni)

Instructions

  1. In a large pan, melt butter over medium heat. Gradually whisk in flour to create a roux, cooking until golden brown.
  2. Bring a pot of salted water to boil and cook pasta until just under al dente. Drain and set aside.
  3. Stir in evaporated milk into the roux until smooth. Add onion powder, garlic powder, minced garlic, salt, and pepper—mix well.
  4. Once the sauce thickens, fold in all but two handfuls of shredded cheese along with the thawed spinach and marinated artichokes.
  5. Combine cooked pasta with the cheese mixture until well coated; add reserved pasta water if needed for consistency.
  6. Top with reserved cheese and broil for 4–6 minutes until bubbly and golden brown.
