  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup white or brown rice
  • 2 cups water
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • Optional: sour cream and salsa

Instructions

  1. In a small bowl, mix olive oil, minced garlic, ground cumin, chili powder, salt, and pepper. Rub this blend over the flank steak and let it marinate for at least 30 minutes.
  2. Bring 2 cups of water to a boil in a medium saucepan. Add rice, reduce heat to low, cover, and simmer for about 18-20 minutes until tender.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated steak for about 4-5 minutes per side until cooked to your preference. Allow it to rest before slicing thinly against the grain.
  4. In a large bowl, combine cooked rice with black beans, corn, diced tomatoes, red onion, cilantro, and lime juice.
  5. Divide the rice mixture into serving bowls and top each with sliced steak, avocado slices, shredded cheese, and optional toppings like sour cream or salsa.
