  • 1.5 lbs flank steak
  • 12 oz corn (grilled or frozen)
  • 1 cup cherry tomatoes
  • 23 bell peppers (red, green, orange)
  • 1/2 red onion
  • 1/4 cup olive oil
  • 1/3 cup fresh lime juice
  • Cilantro lime rice (homemade or store-bought)
  • 12 jalapeños, diced
  • 2 teaspoons lime zest
  • 1/2 cup cilantro, roughly chopped
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon chili powder (optional)
  • 1/4 teaspoon cumin (optional)
  • 1 tablespoon garlic, minced
  • 23 tablespoons chicken broth, more if needed

Instructions

  1. Prepare the salsa by mixing corn, cherry tomatoes, diced jalapeños, diced red onion, lime zest and juice, chopped cilantro, salt, and pepper in a bowl. Adjust seasoning to taste.
  2. Marinate the flank steak in a mix of olive oil, lime juice, lime zest, chili powder, cumin, minced garlic, soy sauce, and salt for at least 30 minutes.
  3. Heat a skillet over medium-high heat and sear the marinated steak for about 4-5 minutes on each side until browned and cooked to your preference. Let it rest before slicing.
  4. In the same skillet, sauté sliced onions and bell peppers with minced garlic and fajita seasoning until tender.
  5. Assemble your bowls by layering cilantro lime rice, sliced steak, sautéed veggies, and top with salsa and any additional toppings like guacamole or sour cream.
