  • 1 cup + 2 tablespoons all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg or flax egg for vegan
  • 1 teaspoon vanilla extract
  • 1 tablespoon molasses or honey
  • 1 cup powdered sugar
  • 2 tablespoons freeze-dried strawberry powder
  • 2 to 3 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. Melt butter in a saucepan until golden brown; cool slightly.
  3. Pulse oats into crumbs; whisk together flour, baking soda, cinnamon, and salt in another bowl.
  4. In a mixing bowl, combine cooled butter with sugars until smooth; mix in egg and vanilla.
  5. Fold in dry ingredients along with oats until just combined.
