  • 4 ears fresh corn, cooked and kernels sliced off
  • 1 pint cherry or grape tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup chopped fresh cilantro (leaves and stems)
  • 1 large avocado, diced
  • Juice of 2 limes
  • Salt and black pepper to taste

Instructions

  1. Cook the corn by boiling for 1½ – 2 minutes or grilling until tender. Let it cool before slicing off the kernels.
  2. While cooling, halve the cherry tomatoes, chop the red onion, and prepare the cilantro.
  3. In a large bowl, mix corn kernels, tomatoes, onion, and cilantro. Squeeze in lime juice and season with salt and pepper. Gently mix to combine.
  4. Chill in the refrigerator for at least one hour to enhance flavors.
  5. Just before serving, add diced avocado gently to avoid browning.
