  • 1 ¾ cup warm water (105-115°F)
  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry jam
  • 2 cups powdered sugar
  • 24 tbsp milk

Instructions

  1. In a stand mixer, combine warm water and sugar; whisk until dissolved. Add yeast and let sit for about 5 minutes until bubbling.
  2. Attach a dough hook and mix in both flours and salt until you have a sticky dough.
  3. Coat a large bowl with 2 tablespoons of olive oil, place the dough inside, cover with plastic wrap, and let rise in a warm spot for about an hour or until doubled in size.
  4. Spread another 2 tablespoons of olive oil in your baking pan. Transfer the dough to the pan, folding it over itself several times.
  5. Cover again and let rise until puffed up.
  6. Preheat the oven to 425°F. Pour remaining olive oil on top of the dough and poke holes with fingers.
  7. Spoon raspberry jam into the holes and bake for about 18-22 minutes until golden brown.
  8. Remove from oven, poke additional holes while warm, fill with more jam, then prepare the glaze by mixing powdered sugar and milk until smooth.
  9. Drizzle glaze over focaccia before cutting into squares and serving.
