  • 1 pound ground beef (or ground turkey)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (or 2 tablespoons homemade taco seasoning)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 2 avocados, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and pepper to taste
  • Optional toppings: jalapeño slices, sour cream, salsa

Instructions

  1. Rinse the long-grain rice until clear; combine with water in a saucepan. Bring to a boil, then cover and simmer on low heat until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until translucent.
  3. Add ground beef (or turkey) to the skillet; cook until browned and fully cooked through.
  4. Stir in taco seasoning, black beans, and corn; heat thoroughly for several minutes.
  5. To serve, divide rice into bowls and layer with the meat mixture, cherry tomatoes, shredded cheese, and diced avocados.
  6. Garnish each bowl with fresh cilantro and lime wedges before serving.
