  • 23 garlic cloves (minced)
  • 1 tbsp vegetable oil
  • 11 oz fresh mushrooms (sliced)
  • 4 tbsp white grape juice (optional)
  • 1 tbsp tamari or soy sauce
  • ¾ cup vegetable broth or water
  • ¾ cup plant-based milk or cream
  • 2 tbsp cornstarch
  • Fresh herbs (thyme, parsley, tarragon)

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sauté diced onion for about 5 minutes until soft.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in sliced mushrooms and cook for approximately 5 minutes until tender and juices are released.
  4. Pour in white grape juice (if using), vegetable broth, tamari, onion powder, garlic powder, smoked paprika, red pepper flakes, salt, and black pepper. Bring to a boil.
  5. In a bowl, mix cornstarch with plant-based milk until smooth. Stir this into the pan, cooking on low-medium heat for about 10 minutes until thickened.
  6. Finish with fresh herbs before serving over rice or pasta.
