  • 1 tsp baking powder

  • 1/2 cup milk (or buttermilk)
  • 1/4 cup cooled espresso or strong coffee
  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • Powdered sugar
  • Unsweetened cocoa powder (for dusting)
  • Chocolate curls or coffee beans (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together butter and sugar until fluffy. Add eggs one at a time, mixing well.
  3. In another bowl, whisk together flour, baking powder, and salt. In a separate container, combine milk and cooled espresso.
  4. Gradually add dry ingredients and liquid mixture to the butter mixture until just combined.
  5. Fill liners about 2/3 full with batter and bake for 15-20 minutes until a toothpick comes out clean. Cool on wire racks.
  6. Brush warm cupcakes with espresso syrup made from heating espresso with sugar until dissolved.
  7. For the frosting: beat mascarpone until smooth, then gradually add chilled heavy cream and powdered sugar until soft peaks form.
  8. Frost cooled cupcakes and dust with cocoa powder before serving.
