  • ½ teaspoon baking powder

  • 1 teaspoon vanilla bean paste
  • 1 ½ cups powdered sugar
  • 2 tablespoons dried rose petals (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together oat or almond milk, sugar, olive oil, and vanilla bean paste until well-blended.
  3. In another bowl, mix pastry flour, salt, cardamom, baking powder, and baking soda.
  4. Gradually combine dry ingredients into wet ingredients while stirring gently until just mixed.
  5. Fill each cupcake liner two-thirds full with batter and bake for about 22 minutes or until a toothpick comes out clean.
  6. For the frosting, beat vegan butter and shortening until creamy; add powdered sugar and rosewater to achieve desired sweetness and fluffiness.
