  • 1 large sweet potato (about 12 ounces), diced into 1" pieces
  • 1 lb flat iron steak, diced into 1" pieces
  • 3 tbsp olive oil (divided)
  • 2 cloves garlic, minced
  • 2 bell peppers, seeded and diced into 1" pieces
  • 4 green onions, thinly sliced
  • 2 tbsp coconut aminos
  • Sea salt and cracked black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Microwave the diced sweet potatoes with salt for 4-6 minutes until slightly tender.
  2. In a skillet over high heat, add 2 tablespoons of olive oil and sear the steak for about 10 minutes, flipping every two minutes.
  3. Add another tablespoon of oil to the skillet, then brown the sweet potatoes for about 3-4 minutes.
  4. Sauté minced garlic in a well in the center of the skillet for about a minute.
  5. Stir in bell peppers and green onions; cook until peppers are just tender (3-4 minutes).
  6. Return cooked steak to the skillet along with coconut aminos; toss to combine and heat through.
  7. Finish with cracked black pepper and fresh cilantro before serving.
