  • 1 & 1/4 cups old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup powdered sugar
  • 1.5 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla; mix well.
  3. In another bowl, whisk together flour, oats, cinnamon, nutmeg, baking soda, and salt. Gradually incorporate into the wet mixture until fully combined.
  4. Scoop out dough balls onto a parchment-lined baking sheet and gently flatten each ball to about an inch thick.
  5. Bake for approximately 10 minutes until soft in the center. Allow cooling on the sheet for 20 minutes before transferring to a rack.
  6. For icing, mix powdered sugar with milk and vanilla until smooth; drizzle over cooled cookies.
