  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup packed light or dark brown sugar
  • 2 tablespoons eggnog, at room temperature
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 10 tablespoons unsalted butter, softened to room temperature
  • 2 cups confectioners' sugar
  • 3 tablespoons eggnog, at room temperature
  • 1/4 teaspoon pure vanilla extract
  • Pinch each salt, ground cinnamon, and ground nutmeg

Instructions

  1. In a medium bowl, whisk together the flour, cinnamon, nutmeg, oats, baking soda, and salt.
  2. In a large bowl, beat together the softened butter and brown sugar until creamy. Add in eggnog, egg, and vanilla; mix until well combined.
  3. Gradually add dry ingredients to the wet mixture until just combined. Chill dough for at least 2 hours.
  4. Preheat oven to 350°F (177°C). Roll dough into balls and place them on lined baking sheets.
  5. Bake for 11-12 minutes until lightly browned around edges; cool on wire racks.
  6. For the filling, beat softened butter until creamy, then add confectioners' sugar and eggnog; mix until fluffy.
  7. Assemble by spreading cream filling on half of the cookies and topping with remaining cookies.
